Pandan 戚风

材料:
蛋黄糊:
A 蛋黄 5个
细砂糖 30g
班兰汁* 70g
植物油 50g
低筋面粉 83g
蛋白霜:
A 蛋白 5个
细砂糖 70g
做法:
1. 蛋黄加入细砂糖,用硅胶刮刀或打蛋器拌均至糖溶解。
2. 加入班兰汁,油,用硅胶刮刀或打蛋器拌均,仔细混合至面糊呈现滑润、黏稠状态。
3. 加入低筋面粉,拌均至滑润状态。
4. 蛋白分次加入细砂糖用电器打发至硬性发泡。
5.将蛋黄糊中加入1/3分量的蛋白霜,用橡皮刮刀拌匀。
6. 加入其余的蛋白霜,混合拌均成面糊。
7. 将面糊倒入戚风模。
8. 放进预热170度的烤箱,烤35分钟至熟。(每个人的烤炉温度不一样,所以在150C是最安全,可以拉长时间烤至45分钟)
9. 出炉倒扣,待凉。
班兰汁=10片班兰叶加300克清水打烂,过滤出班兰汁。

Marble cake
原本是以Japanese Cheese Cake 作为开幕典礼的,但我太太太心急了 ^_^

老公说做一半的分量就好了,那就好吧!谢谢他,生病了还要去帮我买鸡蛋。
Ingredients:
2 eggs
120g superfine flour/cake flour
120g sugar ( But I think it's a bit too sweet)
120g butter
50g dark chocolate (I use chocolate bar instead of chocolate powder)
3 tbsp milk
1 tbsp baking powder
1 tsp vanila extract
Methods:
1. Beat 2 eggs with the sugar.
2. Add vanila extract and baking powder, continue mix for few seconds.
3. Melt the butter (optional), add the butter to the egg mixture, continue stiring
4. Sift the flow over the egg mixture, and gently fold all the ingredients together using a spatula
5. Split the batter, equally into 2 separate bowls.
6. Melt dark chocolate
7. Preheat your oven to 360F/180C
8. Add the melted chocolate to 1 portion of the batter, mix well.
9. Grease and line an 8" (20cm) baking tin. Place blobs of one of the mixtures in the tin, then fill in the gaps with blobs of the other mixture.
10. Use the handle of a spoon to swirl the batter to create the marbling effect.
11. Bake at 180C for 40-45 minutes. Check with a skewer (chopstick) that the cake is cooked and leave to cool for 10 minutes. Remove from the tin and allow to cool completely.

tiramisu.. failed :(
Credit to tiramisu recipe
Ingredients:
1) Whole egg X 3
2) Mascarpone cheese - 500g
3) Vanilla extract - 1 tea spoon
4) Espresso instant coffee powder - 1 full spoon
5) Baileys russian wine - Half bowl
6) Whipping cream - 250ml
7) Pure cocoa powder - 1 full spoon
8) Italian ladyfingers - 1 whole pack
9) 50g white sugar
2) Mascarpone cheese - 500g

4) Espresso instant coffee powder - 1 full spoon
5) Baileys russian wine - Half bowl
6) Whipping cream - 250ml
7) Pure cocoa powder - 1 full spoon
8) Italian ladyfingers - 1 whole pack
9) 50g white sugar
Methods:
1. Prepare espresso coffee liquid
2. Whisk egg yolk + 25g sugar
until the mixture become creamy. Then we add 1 teaspoon of vanilla
extract and whisk again. Add cheese and fold it until a smooth mixture.
3. Whisk whipping cream until the cream become creamy thick and stiff
4. Whisking egg white and the remaining 25g of white sugar until the
egg white become fluffy and when you whole your whisk up, the mixture won't
fall down back to the bowl
5. Add the egg white and whipping cream
back to the cheese and egg yolk mixture
6. Layering
6a. Dip ladyfingers into the espresso
coffee, just a touch of coffee at both side of the ladyfingers. Then layer the
ladyfingers at the bottom of the glass container 1 by 1. After fill up the
bottom with a layer of ladyfingers, add the creamy cheese mixture and make sure
it covers up all the ladyfingers.
6b. Then for 2nd layer, repeat the
whole process but instead of using espresso coffee, we use Baileys russian wine.
6c. After that repeat the process for
the 3rd and 4th layers, until your fill up to the top and make sure the cream
cheese mixture cover all the ladyfingers on the most top layer.
7. Put it
inside the fridge (Not ice section) for at least 4-6 hours
8.
Finishing touch of cocoa powder
The look is ok, but the rum
is just too much. The lady finger with too much coffee and rum cause the
biscuit no longer crispy and too wet. Anyway the look is just fine. :)

Chocolate Banana Cake
Yeah!! 一次就成功!

Ingredients:
200g All-Purpose Flour(plain flour)
25g Valrhona Cocoa Powder
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Vanilla Extract
Pinch of Salt
170g Unsalted Butter, room temperature
170g Caster Sugar
2 Eggs(55g each)
2 Ripe Banana(about 200 - 220g), mashed
30ml of Fresh Milk
100g Dark Chocolate, chopped
Method:-
1. Sift together flour, baking powder, baking soda and salt together in a bowl and set aside.
2. Cream soft butter and caster sugar using a electric beater or hand whisk till pale and creamy.
3. Add one egg at a time together with vanilla extract, beat till combined before stirring in the mashed banana and mix well.
4. Using a spatula, fold in sifted flours in 3 batches alternatively with milk till well combined. Lastly stir in the chopped chocolate.
5. Slowly scrap mixture into the lightly greased Happy Call Pan(grease 1 teaspoon of oil on both side of the pan using hand or paper towel).
6. Bake on low heat for 12 minutes, slowly shift the pan towards right side so that left side (1/2 of the HCP) of the pan is on the heat, bake for another 6 minutes. Next shift the pan back towards the left side so that right side(1/2 of the HCP) of the pan is on the heat. (the purpose of doing this is to even out the baking as well as give the cake a nice brown colour on the surface when flip over)
7. Lastly, flip the HCP over and bake for another 6 minutes(3 minutes left, 3 minutes right) to have a nice brown top.

FOR OVEN METHOD:-
1. Follow steps 1 - 4, pour cake batter into a greased 7" square or round tin.
2. Bake in preheated 180° Celsius oven for about 40 - 50 minutes or when a skewer inserted in the center and comes out clean.
And this is my cake!!
My hubby love it so much, more than 70% of cakes been enjoy~ed by both of us!! Thanks for hubby's courage and helps!!
